1. Prepare the Potato Mixture:
In a large mixing bowl, combine the mashed potatoes with garlic powder, onion powder, paprika, salt, pepper, and parsley. Mix well until smooth and evenly seasoned.
2. Assemble the Cheese Balls:
Take a small portion of the potato mixture (about a tablespoon) and flatten it in your hand.
Place a small cube or pinch of shredded mozzarella in the center, then carefully wrap the potato mixture around it, forming a smooth ball. Repeat until all the potato mixture is used.
3. Coat the Cheese Balls:
Roll each potato ball in flour, then dip it into the beaten eggs, and finally coat it evenly with breadcrumbs. For extra crispiness, repeat the egg and breadcrumb steps.
