Soft Lemon Cookies Recipe

Ingredients
For the Biscuits :
2 eggs
100 g (1/2 cup) sugar
80 ml (1/3 cup) sunflower oil
Zest of 1 lemon
50 ml (3 tablespoons) lemon juice
380 g (3 cups) all-purpose flour
12 g (2 1/2 teaspoons) baking powder
To dust :
80 g (1/2 cup) caster sugar
Preheat the oven :
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Mix the wet ingredients :
In a large bowl, whisk together eggs and sugar until well combined.
Add the sunflower oil, lemon zest and lemon juice, mixing until smooth.
