Prepare Cookie Dough: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Add the egg and vanilla extract, mixing until combined. Assemble Toppings: In a small bowl, mix melted butter and brown sugar. Spoon a small dollop of the mixture onto the parchment paper where each cookie will go.

Add Pineapple and Cherry: Place a piece of pineapple on top of the brown sugar mixture, then place a maraschino cherry half in the center.
