Step 1: Prep the Ingredients
- Peel and dice the potatoes into small cubes. Place them in a bowl of water to prevent browning while you prepare the other ingredients.
- Chop the onion, garlic, tomato, and bell pepper (if using).
Step 2: Cook the Ground Beef
- Heat the oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it up into small pieces with a spatula. Season with a pinch of salt and pepper.
- Once browned, remove the beef from the skillet and set aside.
Step 3: Sauté the Aromatics
- In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant and translucent.
- Stir in the chopped tomato and bell pepper (if using) and cook for another 2 minutes, allowing the flavors to meld.
Step 4: Build the Sauce
- Return the cooked ground beef to the skillet.
- Add the tomato sauce, broth, and all the spices (cumin, smoked paprika, cinnamon, bay leaf). Stir well to combine.
Step 5: Cook the Potatoes
- Drain the diced potatoes and add them to the skillet. Stir to coat them in the sauce.
- Lower the heat to medium-low, cover the skillet, and let the mixture simmer for 20-25 minutes, stirring occasionally.
