Step-by-Step Instructions

Step 1: Prep the Ingredients

  1. Peel and dice the potatoes into small cubes. Place them in a bowl of water to prevent browning while you prepare the other ingredients.
  2. Chop the onion, garlic, tomato, and bell pepper (if using).

Step 2: Cook the Ground Beef

  1. Heat the oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it up into small pieces with a spatula. Season with a pinch of salt and pepper.
  3. Once browned, remove the beef from the skillet and set aside.

Step 3: Sauté the Aromatics

  1. In the same skillet, add the chopped onion and garlic. Sauté for 2-3 minutes until fragrant and translucent.
  2. Stir in the chopped tomato and bell pepper (if using) and cook for another 2 minutes, allowing the flavors to meld.

Step 4: Build the Sauce

  1. Return the cooked ground beef to the skillet.
  2. Add the tomato sauce, broth, and all the spices (cumin, smoked paprika, cinnamon, bay leaf). Stir well to combine.

Step 5: Cook the Potatoes

  1. Drain the diced potatoes and add them to the skillet. Stir to coat them in the sauce.
  2. Lower the heat to medium-low, cover the skillet, and let the mixture simmer for 20-25 minutes, stirring occasionally.
