Ingredients:
– 800 grams of anchovies
– ½ liter of white wine or lemon vinegar
– Extra virgin olive oil
– Salt
– Chili pepper
– Garlic
– Fresh chopped parsley or mint
Procedure:
1. Preparation of the anchovies:
– Scale the anchovies, remove the head, bones and entrails. Wash and dry carefully.
2. Marinade:
– Place the anchovies in a ceramic dish, sprinkle with vinegar or lemon and marinate for at least 12 hours.
