Healthy lemon cream, egg-free, refined sugar-free

Preparation:

Prepare the coconut milk : Place the coconut milk in a medium saucepan.
Add lemon juice and zest : Squeeze the juice from the lemons and add it to the coconut milk along with the grated lemon zest.
Add sweetener : Add maple syrup or agave syrup and vanilla extract to the saucepan. Mix well.
Mix the cornstarch: Mix the cornstarch or arrowroot starch in a small bowl with a little cold water until smooth, so no lumps form.
Thicken the lemon curd : Add the cornstarch mixture to the saucepan and coconut milk mixture. Stirring constantly, heat the mixture over medium heat until it begins to thicken. This may take a few minutes.
