Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
Prepare the Cinnamon Swirl:
In a small bowl, mix the light brown sugar and 1 teaspoon ground cinnamon. Set aside.
Prepare the Apple Mixture:
In another bowl, combine the chopped apples, 2 tablespoons granulated sugar, and 1 teaspoon ground cinnamon. Set aside.
Prepare the Bread Batter:
In a large bowl, cream together the granulated sugar and softened butter until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour and baking powder. Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
Assemble the Bread:
Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture over the batter, then half of the apple mixture. Lightly press the apples into the batter.
Pour the remaining batter over the apples and spread evenly. Top with the remaining cinnamon-sugar mixture and apple mixture. Lightly swirl the top of the batter with a knife.
