Directions:
1. Make the Peanut Butter Mixture:
In a large mixing bowl, combine peanut butter, butter, powdered sugar, and vanilla extract. Mix until smooth and well combined.
2. Shape the Balls:
Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for 20-30 minutes, or until firm.
3. Melt the Chocolate Coating:
Melt the chocolate chips and coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
4. Coat the Peanut Butter Balls:
Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated. Let excess chocolate drip off, then place the ball back on the parchment paper.
