Caramel Birthday Cake Roll

Instructions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, beat the eggs, granulated sugar and vanilla extract until light and fluffy.
In a separate bowl, sift together the flour, baking powder and salt. Gently fold the dry ingredients into the egg mixture.
Pour the batter into the prepared baking sheet and spread evenly.
Bake for 10-12 minutes or until the cake springs back when touched.
While the cake is still warm, dust it with icing sugar and turn it out onto a clean kitchen towel.
Carefully roll the cake up in the towel, starting with the short end, and leave to cool completely.
