Mexican Shrimp Cocktail Recipe
Ingredients:
– 1 lb cooked shrimp, peeled and deveined
– 1/2 cup red onion, finely chopped
– 1 cup cucumber, diced
– 1 cup tomatoes, diced
– 1/2 cup fresh cilantro, chopped
– 1 jalapeño, seeded and finely chopped (optional for heat)
– 1 ripe avocado, diced
– 1 cup tomato juice (or Clamato for added flavor)
– 1/4 cup ketchup
– 2 tbsp lime juice (about 2 limes)
– 1 tbsp hot sauce (optional)
– Salt and pepper to taste
– Tortilla chips or saltine crackers for serving
