Preparing the Crust
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Crust: If using a store-bought pie crust, follow the package instructions for blind baking (pre-baking the crust). If making a homemade crust, roll out the dough and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Prick the bottom of the crust with a fork to prevent puffing up during baking.
Blind Bake: Line the crust with parchment paper and fill with pie weights or dried beans. Blind bake the crust in the preheated oven for about 10 minutes. Remove the parchment paper and weights, and bake for an additional 5 minutes, or until the crust is lightly golden. Remove from the oven and set aside to cool slightly.
Making the Filling
Blend the Filling: In a blender, combine the quartered lemon (with peel), granulated sugar, eggs, melted butter, vanilla extract, and salt. Blend on high speed until the mixture is smooth and well combined. The lemon peel will be completely blended into the filling, giving it a lovely texture and flavor.
Assembling and Baking the Pie
Pour the Filling: Pour the blended lemon filling into the pre-baked pie crust, spreading it out evenly.
