Ingredients for the sponge cake:
- 4 eggs
- 120g sugar
- 120g flour
- 1 pinch of salt
strawberry mousse:
- 340g strawberries
- 100g sugar
- 40g water
- 12g gelatin powder
- 375 g fresh cream
strawberry jelly:
- 250g strawberries
- 40g sugar
- 10g water
- 6g powdered gelatin
garnish and decoration:
- 12/13 small and regular strawberries for decoration on the edge
- 200 g strawberries, cut into small cubes for internal garnish
- 2 strawberries for decoration
