1. Start by gathering all of your ingredients and preparing your slow cooker. A quick spray of cooking spray or a liner will make cleanup a breeze.
2. Evenly distribute the sliced kielbasa in the bottom of the slow cooker and place it in the slow cooker.
3. Combine the chopped apples with the brown sugar, apple cider, Dijon mustard, garlic powder, and apple cider vinegar in a medium bowl. Season with salt and pepper to taste. Make sure all of the ingredients are incorporated by mixing well.
4. Coat the sausage pieces well with the apple and spice mixture, then pour it over the kielbasa in the slow cooker.
5. Place the lid on the slow cooker and cook on low for three to four hours or on high for one to two hours. Bake until kielbasa is cooked through and flavors have combined.
6. Gently toss kielbasa pieces to coat with sauce when finished cooking.
7. Garnish with chopped fresh parsley, if desired, for a visual and flavorful touch just before serving.
8. Serve Slow Cooker Apple Kielbasa Bites warm, spreading on a platter with toothpicks or topping with whatever you like.
