The Best Carrot Oatmeal Cookies! Healthy dessert without added sugar and gluten!
Preheat the oven:
Heat to 180°C (350°F) and line a baking tray with parchment paper.
Mix the dry ingredients:
In a bowl, combine oatmeal, sunflower seeds, sesame seeds, walnuts, cinnamon, and nutmeg. Stir well.
Prepare the wet ingredients:
Whisk the egg in another bowl. Add melted butter, honey, and raisins. Mix thoroughly.
Add the carrots:
Fold grated carrots into the wet mixture.
Combine wet and dry:
Gradually add the dry mix to the wet ingredients, stirring until you get a dough.
Shape the cookies:
Scoop dough with a tablespoon, shape into cookies, and place on the tray. Decorate with pumpkin seeds.
Bake:
Bake for 15-20 minutes until edges are golden.
Cool & enjoy:
Let them cool for 5 minutes on the tray, then transfer to a rack.
