Sweet Potato Casserole with Spinach and Cheese

Directions:

Prepare the Sweet Potatoes:

Preheat your oven to 375°F (190°C).
Peel and cut the sweet potatoes into cubes.
Boil the cubes in salted water until tender, about 10-15 minutes. Drain and set aside.

Sauté the Spinach:

Heat olive oil in a large pan over medium heat.
Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add minced garlic and cook for another minute until fragrant.
Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
Season with salt, pepper, and dried thyme (if using). Remove from heat.
