Sweet Blueberry Biscuits

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 3/4 cup buttermilk (or regular milk with 1 tablespoon lemon juice)
  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk (or more, as needed)
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or lightly grease it.

Step 2: Make the Biscuit Dough

  1. In a large bowl, whisk together the flourbaking powdersalt, and sugar.
  2. Add the cold butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Gradually pour in the buttermilk, stirring gently until just combined. Be careful not to overmix.
  4. Gently fold in the blueberries.

Step 3: Shape the Biscuits

  1. Turn the dough out onto a lightly floured surface. Pat or roll it out to about 1-inch thickness.
  2. Use a round biscuit cutter or a glass to cut out biscuits, reshaping the dough as needed.
  3. Place the biscuits on the prepared baking sheet, about 1 inch apart.
