Strawberry and Blueberry Cheesecake

1 1/2 cups graham cracker crumbs (or digestive biscuits)
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted

For the Filling:

3 8-ounce packages cream cheese, softened
1 cup granulated sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon lemon zest (optional, for a hint of freshness)
1/2 cup sour cream

For the Topping:

1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1/4 cup water
1 teaspoon lemon juice

How to Make Strawberry and Blueberry Cheesecake
Step 1: Prepare the Crust

Preheat the Oven: Set your oven to 325°F (160°C).
Mix the Ingredients: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
Press into the Pan: Press the mixture firmly into the bottom of a 9-inch springform pan. Use the bottom of a measuring cup to create an even layer.
Bake: Bake the crust for 10 minutes, then set it aside to cool while you prepare the filling.

Step 2: Make the Cheesecake Filling

Beat the Cream Cheese: In a large mixing bowl, beat the softened cream cheese with a hand or stand mixer until smooth and creamy, about 2–3 minutes.
Add Sugar and Flavorings: Gradually add the sugar, beating until well incorporated. Mix in the vanilla extract and lemon zest, if using.
Add the Eggs: Add the eggs one at a time, mixing on low speed to avoid overbeating. Scrape down the sides of the bowl as needed.
Incorporate Sour Cream: Gently mix in the sour cream until the filling is smooth and uniform.

Step 3: Assemble and Bake

Pour the Filling: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.
Bake: Place the springform pan in the oven and bake for 50–60 minutes, or until the edges are set but the center still jiggles slightly when shaken.
Cool Slowly: Turn off the oven and crack the door open slightly, allowing the cheesecake to cool gradually for 1 hour. This helps prevent cracks.
Chill: Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight.
