Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

Make the Cream Sauce

Reduce the heat to low and pour in the heavy cream. Stir to combine and bring to a gentle simmer.
Stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
Add the Spinach

Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring, until wilted.
Combine with Spaghetti

Add the cooked spaghetti to the skillet and toss to coat in the sauce.
If the sauce is too thick, add reserved pasta water, a few tablespoons at a time, until the desired consistency is reached.
Serve

Divide the pasta among plates and garnish with extra Parmesan cheese and crushed red pepper flakes if desired. Serve immediately.
