Cook the Pasta: Preheat your oven to 375°F (190°C). Cook the pasta according to package instructions until al dente. Drain and set aside.
Prepare the Shrimp Scampi: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp and set aside.
Create the Sauce: In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Pour in the white wine (or chicken broth) and lemon juice, and simmer for another 2-3 minutes. Season with salt and black pepper to taste.
Combine and Bake: In a large mixing bowl, combine the cooked pasta, shrimp, cherry tomato sauce, Parmesan cheese, and chopped parsley. Toss until everything is well coated.
Assemble the Bake: Transfer the pasta mixture into a greased baking dish. Sprinkle the shredded mozzarella cheese evenly on top.
Bake: Place the dish in the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.
Serve: Remove from the oven and let it cool slightly before serving. Garnish with additional fresh parsley if desired.
