Salted Butter Caramel is a real passion

Add the butter :
When the caramel has a nice amber color, remove it from the heat and immediately add the butter in pieces. Be careful of splashes! Mix quickly until the butter is completely incorporated.
Add the cream :
Return the pan to low heat and gradually add the liquid cream while stirring constantly. Cook for another 2-3 minutes to obtain a creamy consistency.
Finalize :
Remove from heat and add a pinch of fleur de sel if you want to enhance the salty flavor. Let cool for a few minutes before transferring the caramel to a jar.
Conservation :
This caramel keeps perfectly in the refrigerator for 2 to 3 weeks. You can use it as a topping for pancakes, waffles, ice cream or simply by the spoonful!
