Pork Loin with Cranberry-Dijon Sauce and Apple Cider Glaze
Preheat the oven to 375F 190C.
In a small bowl, mix the Dijon mustard, rosemary, salt, and pepper. Rub the mixture evenly over the pork loin.
Heat olive oil in a skillet over medium-high heat. Sear the pork loin on all sides until browned about 3-4 minutes per side.
Place the seared pork loin in a roasting pan. In the same skillet, add apple cider, honey, and cranberries. Stir to combine and bring to a simmer.
Pour the cranberry apple cider glaze over the pork loin.
Roast the pork in the oven for 25-30 minutes or until the internal temperature reaches 145F 63C.
Let the roast rest for 10 minutes before slicing. Drizzle with the remaining glaze and serve. Enjoy!
