1. Prepare the Dough:
Sift the flour into a large bowl. Add the boiling water and salt, mixing with chopsticks.
Once cool enough to handle, knead the dough by hand until it’s smooth. If necessary, add a little more water.
Transfer the dough to a floured surface and knead until soft and smooth.
Place the dough in a clean bowl, cover it with a cloth, and let it rest for 30 minutes.
2. Make the Filling:
In a large mixing bowl, combine ground pork, chopped shrimp paste, napa cabbage, garlic, green onion, soy sauce, rice vinegar, sesame oil, and cornstarch.
Mix well in one direction until the mixture becomes pasty and well combined. Alternatively, use a food processor to blend the ingredients into a smooth paste.
3. Prepare the Sauce:
In a small bowl, mix together the soy sauce, rice vinegar, sesame oil, honey (or sugar), chili garlic oil, and optional green onion and sesame seeds.
Stir until well combined and set aside.
4. Form the Dumplings:
Roll the dough onto a floured surface and divide it into two equal pieces. Roll each piece into a cylinder about 1 inch in diameter.
Cut each cylinder into 12 equal pieces.
Roll each piece into a thin circle (about 2 ½ inches in diameter).
Place a small spoonful of filling in the center of each dough circle.
Moisten the edges with water, bring the sides together, and pinch the dumpling closed. Crimp the edges to seal them tightly.
5. Cook the Dumplings:
Heat 2 tbsp of vegetable oil in a wide pan over medium heat.
Add the dumplings and fry them on their flat sides for 3-4 minutes, until the bottoms are golden brown.
Add about ¼ cup of water to the pan, cover with a lid, and let the dumplings steam for another 2-3 minutes, or until the filling is fully cooked.
6. Serve:
Carefully remove the dumplings from the pan and transfer them to a plate.
Serve immediately with the dipping sauce on the side.
