2. Mix the dough
In a bowl, beat the eggs with the sugar until the mixture is light and fluffy.
Add the melted butter and vanilla extract, then mix well.
Sift the flour, baking powder and salt into a separate bowl, then gradually stir them into the liquid mixture.
Add the reserved pineapple juice to loosen the dough. If using rum, stir it in at this stage.
3. Assemble the cake
Butter and flour a mold (a round or cake mold will do).
Pour the batter into the mold evenly.
Arrange the pineapple slices on top of the dough, lightly pressed down. If you like, sprinkle with grated coconut.
4. Cooking
Bake for 30-35 minutes.
Check the cooking by inserting the blade of a knife in the center: it should come out dry. 5. Cooling and unmolding
Let the cake cool in the pan for 10 minutes before carefully removing it from the pan onto a wire rack.
Store the cake at room temperature or slightly warm.
