Passion Fruit and Coconut Layer Cake

– **For the topping:**
– Passion fruit pulp (with seeds) 🍈
– Toasted coconut flakes or pieces 🥥

#### **Instructions:**

1️⃣ **Preheat the oven:**
Preheat your oven to 180°C (350°F). Grease two 20 cm cake tins and line the bottoms with baking paper. 🔥

2️⃣ **Prepare the cake batter:**
In a bowl, mix the flour, yeast and salt. In another bowl, whisk the sugar with the coconut oil. Add the eggs one at a time, then stir in the coconut milk, passion fruit juice and vanilla extract. Gradually incorporate the dry ingredients to obtain a smooth batter. 🍥

3️⃣ **Bake the cakes:**
Divide the batter between the two pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely. 🕒
