Make the batter
Make the oat flour : In a blender, pulse the oats until they become a coarse flour.
Mix the batter: In a bowl, combine the ground oats, grated apple, water, egg, and vanilla extract. Blend until you have a smooth batter.
Cook the pancakes
Heat the pan: Heat a small amount of oil in a nonstick skillet over medium heat.
Cook the pancakes: Spoon small amounts of batter into the pan to form pancakes. Place a few banana slices on top of each pancake.
