No-Bake Orange Pineapple Swirl Cheesecake
Directions:
Prepare the Crust:
In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes to set.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and 1 cup sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the sour cream, vanilla extract, orange juice, and orange zest until fully combined.
Layer the Cheesecake:
Pour half of the cream cheese mixture over the chilled crust. Evenly distribute half of the pineapple chunks and mandarin orange slices over the cream cheese layer. Pour the remaining cream cheese mixture on top.
Create the Swirl:
If desired, create a swirl pattern by drizzling a bit more orange juice over the top. For a stronger flavor and thicker swirl, you can also use orange jelly.
Chill:
Refrigerate for at least 4 hours, or until set.
