Mediterranean Veggie Pita Bread Bake Recipe

For the Tzatziki Sauce (optional)
1 cup Greek yogurt
1/2 cucumber, grated and excess water squeezed out
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
Prepare the Vegetables: In a large bowl, combine the cherry tomatoes, zucchini, red bell pepper, yellow bell pepper, red onion, and kalamata olives. Add the minced garlic, olive oil, dried oregano, dried basil, salt, and pepper. Toss to coat the vegetables evenly.
Assembling the Bake
Layer the Pita Bread: Spread the cut pita bread pieces evenly across the bottom of the prepared baking dish.
Add the Vegetables: Spread the seasoned vegetable mixture over the pita bread pieces, ensuring an even distribution.
Add the Cheese: Sprinkle the crumbled feta cheese evenly over the top of the vegetables.
