Luxurious Vanilla Soufflé Recipe
In another bowl, whisk together the egg yolks and remaining sugar until light and slightly thickened.
Slowly pour the heated cream mixture into the bowl with the egg yolks, whisking constantly to prevent it from pooling.
Return mixture to saucepan over medium heat. Add vanilla seeds or bean extract and stir until mixture thickens enough to coat the back of a tablespoon, about 5 to 7 minutes.
Once thickened, remove from heat and strain the custard through a fine mesh sieve into a clean dish to remove any vanilla bean residue.
Let the pastry cream cool to room temperature, then cover with plastic wrap touching the surface to prevent a skin from forming. Refrigerate for at least four hours, preferably overnight, to blend the flavors and cool completely.
Once cooled, cream the pastry cream in the ice cream maker following the manufacturer’s instructions until smooth and creamy.
Serve immediately for a softer texture or transfer to a freezer-safe container and freeze for a firmer texture.
