Prepare the coffee mix:
In a bowl, mix freshly brewed coffee, sugar and cocoa powder. Stir well until sugar dissolves. Test and adjust the flavor if necessary. Book up.
Making the cream:
In a large bowl, mix mascarpone cheese and Lotus Cookie Cream (both very cold). Beat them till they blend in. Add the whipping cream (also cold) and whip until you get a thick, firm cream.
Assemble the dessert:
Dip the cakes in the coffee mixture and place them in the bottom of individual molds or a large mold. With the pastry sleeve, cover the cakes with buttercream forming a uniform layer.
Add more layers:
Put another layer of well-soaked cookies into the coffee mix. Add another layer of cream with the pastry sleeve.
Rest and decorate:
Cover the tiramisu with paper film and leave it in the fridge for a few hours or, better yet, overnight. Before serving, garnish with Lotus Cookie Cream (heated a few seconds in the microwave to make it smooth) and sprinkle cookie crumbs around.
