Lemon Tiramisu
Preparation:
In a large bowl, separate the egg whites from the yolks. Whisk the yolks with the sugar until the mixture turns white and frothy.
Add the mascarpone, lemon juice and zest to the mixture, then gently fold in.
In another bowl, beat the egg whites until stiff and gently fold in to the previous mixture.
In a dish, mix the cooled coffee with the lemon liqueur (if using). Quickly dip the sponge fingers in the mixture and place them on the bottom of a dish.
Spread a layer of the mascarpone mixture on the biscuits. Repeat the operation, alternating layers of biscuits and cream, finishing with a layer of cream.
Refrigerate for at least 4 hours (ideally overnight) so that the tiramisu sets well.
Before serving, sprinkle with cocoa powder.
