Lemon Tiramisu
Instructions:
Begin preparing the sauce by mixing the lemon juice, water and sugar in a shallow bowl. Set aside.
In another bowl, beat the egg yolks and sugar until the mixture whitens and thickens.
Add the lemon juice, lemon zest and vanilla extract to the egg yolk mixture. Mix well.
Add the mascarpone to the yolk mixture until smooth.
In another bowl, whip the cream until stiff peaks form.
Gently fold the whipped cream into the mascarpone and egg yolk mixture so as not to lose the lightness of the cream.
Quickly dip the biscuits in the lemon dipping mixture and arrange them on the bottom of a plate or mold.
