Healthy and Tasty Lentil Cakes
Prepare the Lentils:
Rinse red lentils thoroughly under cold water. In a medium saucepan, cover lentils with water and bring to a boil. Reduce heat and simmer for about 15 minutes, or until lentils are tender. Drain excess water and let cool slightly.
Sauté Vegetables:
While lentils cool, heat a drizzle of olive oil in a skillet over medium heat. Add minced shallot and garlic, and sauté until soft and translucent. Add grated carrot and cook for an additional 2-3 minutes. Set aside to cool.
Mix Galette Ingredients:
In a large bowl, combine cooked lentils, sautéed shallot, garlic, carrot, chopped parsley, tomato puree, salt and black pepper. Mash the mixture together until it is cohesive but still has some texture. If the mixture is too wet, you can add a little flour (if not strictly vegan) or breadcrumbs to help bind it together.
Form the Patties:
Shape the mixture into patties with your hands. If the mixture is sticking to your hands, lightly moistening them with water may help.
Cook the Patties:
Heat a thin layer of olive oil in a non-stick frying pan over medium heat. Fry the patties for about 4-5 minutes on each side, or until golden and crispy.
