Green Tea, Lemon & Ginger Gummies

1. In a saucepan, pour the cold water and sprinkle the gelatin powder over the top. Allow it to bloom and dissolve. Set this mixture aside.
2. Brew the green tea according to the instructions on the tea package. Once brewed, remove the tea bags and ensure you have 1/2 cup of strong tea.
3. Add the brewed tea, ginger juice, and lemon juice to the saucepan with the bloomed gelatin. Heat gently while stirring until the gelatin is completely dissolved and the mixture is smooth. Be careful not to let it boil. If you want to use honey, add it now and stir until combined.
4. Pour the gummy mixture into molds or a baking dish. Place it in the refrigerator for at least 2 hours, or until the gummies are firm.
5. Once set, remove the gummies from the molds or cut them into bite-sized pieces.
