Fruity Pebbles No-Bake Cheesecake

Place 4 cups of Fruity Pebbles in a food processor and blend until fine crumbs form.
Measure 2 1/2 cups of the crushed cereal into a large bowl. Set the remaining crumbs aside for later.
Add 1/3 cup melted butter and 1/4 teaspoon salt to the cereal crumbs. Mix until well combined.
Press the mixture firmly into a pie pan, shaping it along the bottom and up the sides to form the crust.
Cover the crust and freeze for 15 minutes, or until firm.

In a large mixing bowl, combine 16 ounces of softened cream cheese, 1 teaspoon vanilla extract, 1 cup powdered sugar, and 1/2 cup sour cream.
Whip the mixture until smooth and creamy.
Slowly add 3/4 cup heavy whipping cream and the remaining Fruity Pebbles crumbs. Continue mixing until fully combined.
3️⃣ Assemble the Cheesecake:

Pour the cream cheese filling into the prepared Fruity Pebbles crust. Smooth the top with a spatula.
Cover and refrigerate the cheesecake for at least 1 hour, or until set.
4️⃣ Garnish & Serve:

Before serving, sprinkle additional Fruity Pebbles cereal on top for a colorful garnish.
