From the moment I stumbled upon this recipe, I had a feeling it would be phenomenal. And oh boy, was I right! So incredibly delicious!

2 large white onions
8-10 mozzarella cheese sticks
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
2 large eggs, beaten
1 cup breadcrumbs
Oil for frying
Directions
Peel the onions and cut them into 1/2 inch thick rings. Carefully separate the rings from each other. Keep the large and medium ones as these work best.
Cut the mozzarella sticks to fit inside the larger onion rings. Place a piece of mozzarella inside each ring, making sure it fits snugly and doesn’t overlap.
In a shallow bowl, mix together the flour, garlic powder, paprika, and salt. Transfer the beaten eggs to another shallow bowl. And for a third step, have your breadcrumbs ready.
Take each mozzarella-filled onion ring and start by dipping it in the flour mixture, making sure it is completely covered. Then dip in the beaten eggs and finish by coating well with breadcrumbs.
Repeat the dipping process twice for each ring to ensure a well-coated and crispy exterior.
Heat the oil in a large skillet to 375°F (190°C). Fry the onion rings in batches until golden brown and crispy, about 2-3 minutes on each side.
Drain the fried onion rings on a paper towel to remove excess oil and serve hot with your favorite dipping sauce.
Variations & Tips
For a healthier option, you can bake the mozzarella onion rings instead of frying them. Simply preheat your oven to 400°F (200°C) and place the breaded rings on a baking sheet lined with parchment paper. Lightly spray with cooking oil and bake for about 15-20 minutes, flipping halfway through, until golden brown and crispy. Feel free to experiment with different cheeses like cheddar or pepper jack for a spicy kick!
