Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Spray a 9-inch deep pie dish with cooking spray or brush lightly with melted butter.
Step 2: Make the Crust
Place Oreo cookies in the bowl of a food processor and pulse until finely ground.
Add the melted butter and pulse until moistened.
Press the mixture evenly into the bottom and up the sides of the prepared pie dish.
Bake for 10-15 minutes, or until fragrant and set. Transfer to a wire rack and let cool completely.
Step 3: Make the Filling
Combine the chopped chocolate and butter in a heatproof bowl set over a saucepan with 1 inch of simmering water. Stir until melted and smooth (alternatively, melt it in the microwave, stirring every 20 seconds). Set aside to cool.
In a heat-proof bowl, combine the eggs with half of the sugar (1/2 cup or 100g). Whisk to blend well.
Place the bowl over the simmering water and whisk constantly until the mixture reaches 165°F (74°C) on a digital thermometer. It should feel warm to the touch and completely smooth when rubbed between your fingers.
Remove the bowl from heat and place it on a tea towel. Beat the egg mixture on high speed while gradually adding the remaining 1/2 cup of sugar. Continue beating until very pale, thick, and tripled in volume (ribbon stage), about 3-5 minutes.
Add the cooled chocolate mixture and vanilla extract, whisking gently until incorporated. Let it cool for about 30 minutes, stirring occasionally, until it’s not warm but not solidified.
Step 4: Whip the Cream
In a clean bowl, pour the heavy whipping cream and beat on medium speed until it thickens. Increase the speed and beat until it forms soft peaks.
Gently fold the whipped cream into the chocolate mixture in 2-3 stages until no white streaks remain. Pour this luscious mixture into the cooled crust.
Step 5: Chill the Pie
Place the pie in the fridge and let it set for at least 4 hours or up to 24 hours.
Step 6: Make the Topping
In a clean bowl, pour the heavy whipping cream and beat on medium speed until thickened.
Sift in the powdered sugar and beat until soft peaks form.
Spoon the whipped cream on top of the chilled pie and garnish with dark chocolate curls.
