Sprinkle in the onion powder and dry mustard. If desired, add a pinch or two of cayenne pepper for a little heat. Mix everything together until well incorporated. (You can also use an electric mixer if desired.)
If you prefer a milder flavor, add the dried parsley and mix it into the dip. This step is optional and can be skipped if desired.
Once the dip is well mixed, cover the bowl with plastic wrap or transfer to an airtight container. Refrigerate for at least 1 hour and preferably overnight to allow the flavors to blend.
Before serving, give the dip a quick stir to make sure it is well combined. If desired, garnish with additional chopped roasted red peppers or a sprinkle of parsley.
Serve the pimento cheese dip with your favorite crackers, tortilla chips, or veggie sticks. Enjoy!
