Easy Lemon Spanish Madeleines

  1. Start by preheating your oven to 250 degrees.
  2. Proceed by breaking your eggs into a bowl, and add the 200g of sugar.
  3. Beat the eggs with the sugar for 5-6 minutes at maximum power.
  4. Once done, weigh your flour and add 2 teaspoons of baking powder.
  5. Pass your lemon under water, then grate it to get its zest (You only have to grate the yellow skin of the lemon, so go slowly).
  6. Then add the oil. Then lemon juice and zest.
  7. Put the power of your robot to the minimum and slowly add the flour mixed with the baking powder. Now your dough is ready!

  13. So, you have to cook them: 5 minutes at 250 degrees, 5 minutes at 220 degrees, 5 minutes at 180 degrees.

Be careful, all ovens are different, so keep an eye on your madeleines, because if your oven is too hot, they could be charred.
