Preheat Oven: Preheat your oven to 350°F (175°C) and grease a loaf pan.
Mix Wet Ingredients: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs, vanilla extract, and sour cream, mixing until well combined.
Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Stir until the batter is smooth and well incorporated.
Fold in Sprinkles: Gently fold in the rainbow sprinkles, being careful not to overmix, to avoid the colors bleeding.
Bake: Pour the batter into the prepared loaf pan and sprinkle extra sprinkles on top for decoration. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool & Serve: Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and serve this festive holiday treat!
