Delicious Vegetable Soup with Parmesan Toast: A Comforting Dinner Recipe
For the parmesan toast:
Olive oil
Salt, to taste
Herbs of Provence
Smoked paprika
Garlic Powder
Grated parmesan cheese
Slices of bread
Instructions
Prepare the soup:
Sauté the vegetables:
Heat a large saucepan over medium heat and add a drizzle of olive oil.
Add the finely chopped onion and cook for 3 to 5 minutes until translucent.
Add the diced carrot and a pinch of salt, and cook for another 3 to 5 minutes.
Add the peppers and cook:
Add the diced yellow, green and red peppers. Stir well.
Cover with a lid and cook over medium heat for 10 minutes, stirring occasionally.
