Ingredients:
4 medium tomatoes (about 400 grams)
1 cup (200 grams) pasta of your choice
1 cup (240 ml) water
1 teaspoon salt (to taste)
1/2 teaspoon black pepper
1 teaspoon olive oil
1/4 teaspoon oregano (optional)
1/4 teaspoon chili flakes (optional)
1 tablespoon grated cheese (optional, for garnish)
Directions:
Wash tomatoes thoroughly.
Remove tops from tomatoes and cut into bite-sized pieces.
In a pressure cooker, add the crushed tomatoes, 1 cup of water and salt.
Close the lid and cook for 2-3 whistles until the tomatoes are soft.
Once the pressure is released, open the lid and crush the tomatoes with a spoon.
In another pan, heat the olive oil and sauté the pasta until lightly browned.
Add the cooked tomato mixture to the sautéed pasta.
Add more water if necessary to achieve a soupy consistency.
Add black pepper, oregano and chilli flakes (if using) and stir well.
Cook for an additional 5-7 minutes until the pasta is cooked and well combined.
Top with grated cheese and serve hot.
