Step 1
For the dough, put 125 ml buttermilk and 25 g flour in a small saucepan and stir with a whisk until smooth. Heat the mixture on a medium setting, stirring constantly, for about 2-4 minutes until it thickens and has a consistency similar to mashed potatoes.
Step 2
Immediately place the flour dough into a small bowl and cover with cling film, placing the film directly on the dough so that no skin forms. Allow to cool completely.
Step 3
Mix 300 g flour, sugar, salt and yeast in a mixing bowl. Add the cooled flour dough, 75 ml cold buttermilk and egg and knead all ingredients on a low setting with the dough hook of a food processor until no more flour is visible.
Step 4
Increase the speed to medium and continue kneading for about 8-10 minutes until a very smooth, elastic dough is formed. The dough may stick to the edge of the bowl while kneading (you can scrape it down with a dough scraper from time to time), but it should eventually come away from it.
