Ingredients:
For the crust:
1 1/4 cup flour
1/4 cup ground almonds
1/4 cup cocoa powder, unsweetened
1/4 cup sugar
1/4 tsp. salt
1/2 cup cold unsalted butter, cut into small cubes
1 tbsp. vanilla extract
1 egg
1-2 tablespoons ice water
For the caramel:
1 1/2 cups sugar
1/2 cup water
1/2 cup 35% cream
5 tbsp.
1 tbsp unsalted butter salt
For the chocolate ganache:
1/2 cup 35% cream
120g bittersweet chocolate, chopped
To garnish: sea salt crystals
