Instructions:
1. Preheat the oven to 180ยฐC. Tap a sulfurized paper pastry plate.
2. In a bowl, whisk eggs and sugar until the mixture is white and double the volume.
3. Add sifted flour and cocoa, mix gently.
4. Pour the batter on the plate and spread it evenly. Bake for 10-12 minutes.
5. Mold the genoise on a damp torch sprinkled with icing sugar. Roll it gently with the torch and let it cool.
6. For filling, melt the chocolate with the cream and butter. Let it cool down.
7. Roll out the genoise, spread the chocolate ganache, then roll again.
8. Sprinkle icing sugar and refrigerate for at least 1 hour before serving.
