Chocolate Maraschino Layer Cake

Frosting
1 ½ cups (340g) unsalted butter, softened
4 cups (500g) powdered sugar
½ cup (50g) cocoa powder
4 tbsp milk or cream
1 tsp vanilla extract
Instructions
Cake
Preheat Oven: 350°F (175°C). Grease and flour two 8-inch (20cm) round cake pans.
Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
Add Wet Ingredients: Add eggs, milk, oil, and vanilla. Mix until smooth. Stir in boiling water (batter will be thin).
Bake: Divide batter between pans and bake for 30-35 minutes. Cool completely.
Filling
Whip the heavy cream with powdered sugar until soft peaks form.
Gently fold in chopped maraschino cherries. Chill until ready to use.
Frosting
Beat butter until creamy.
Gradually add powdered sugar, cocoa, milk, and vanilla. Beat until smooth and fluffy.
