Step 1: Prepare the Ingredients
- Peel and dice the potatoes into small cubes for quicker cooking.
- Chop the onion and garlic finely to enhance the soup’s flavor.
Step 2: Cook the Ground Beef
- In a large soup pot or Dutch oven, cook the ground beef over medium heat until browned. Break it up into small crumbles as it cooks.
- Drain excess grease if necessary, and set the beef aside on a plate.
Step 3: Sauté the Vegetables
- In the same pot, melt the butter over medium heat.
- Add the onion (and carrots or celery, if using) and sauté for 5–7 minutes until softened.
- Stir in the garlic, paprika, and mustard powder, cooking for another minute until fragrant.
Step 4: Build the Soup Base
- Sprinkle the flour over the sautéed vegetables and stir well to coat.
- Gradually pour in the broth while stirring to avoid lumps. Bring the mixture to a gentle boil.
- Add the diced potatoes and cook for 15–20 minutes, or until the potatoes are tender.
Step 5: Add the Cheese and Milk
- Reduce the heat to low and stir in the cooked ground beef.
- Slowly pour in the milk, stirring constantly to keep the soup smooth.
- Gradually add the shredded cheese, one handful at a time, stirring until fully melted and incorporated.
Step 6: Season and Serve
- Taste the soup and adjust seasoning with salt and pepper as needed.
- Ladle the soup into bowls and garnish with your favorite toppings, such as crumbled bacon, green onions, or extra cheese.
