Add the cooked ground beef back to the pot with the potatoes. Stir in the roux mixture, followed by the shredded cheese. Stir continuously until the cheese is fully melted and the soup is creamy.

Step 6: Taste and Serve

Season the soup with salt and pepper to taste. Ladle it into bowls and garnish with crispy bacon bits, chopped green onions, or extra shredded cheese. Serve hot with crusty bread or crackers on the side.
