Carrot Cake Roll Recipe

1 teaspoon vanilla extract
1 1/2 cups powdered sugar

Instructions:

Prepare the Cake:

Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan (or a rimmed baking sheet) with parchment paper and lightly grease the paper with cooking spray.
In a large bowl, beat the eggs and granulated sugar together until light and fluffy, about 2-3 minutes.
Add the vanilla extract and mix.

In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Fold in the grated carrots until evenly distributed throughout the batter.
Pour the batter into the prepared pan, spreading it evenly.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
