Cajun Chicken Sloppy Joes

Preheat oven to 400°F for toasting the buns.
In a large sauté pan over medium-high heat, cook the ground chicken until it’s well crumbled and fully cooked.
Add the canned corn and diced red onions to the pan and continue cooking for 3 minutes.
Mix in the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Reduce heat to low.
Stir in the mayo just until it is combined with the rest of the mixture.
Place the hamburger buns on a baking sheet in a single layer and toast in the oven until lightly browned, about 4-5 minutes.
Remove the buns from the oven and spoon the ground chicken mixture onto the bottom buns.
Sprinkle the shredded cheese on top of the chicken mixture and then place the top buns on.
Serve hot and enjoy!
