- 1 medium head of broccoli, chopped

- 4 cups of vegetable broth (or water)
- ½ cup unsweetened soy milk (or dairy milk)
- 1 tbsp olive oil
- Salt and pepper, to taste

How to Prepare the Soup
- Sauté the Aromatics
- Heat olive oil in a large saucepan over medium heat.
- Add minced garlic and onion, cooking for 2-3 minutes until fragrant and translucent.
- Stir in turmeric or ginger (if using) for an extra health boost.
- Add the Vegetables
- Toss in the broccoli, cauliflower, and potato. Stir until the vegetables are well-coated with the aromatics.
- Pour in the vegetable broth or water to cover the vegetables.
